Block Diet

How exactly does ones diet cause an excess of lipids to be present in their fecal matter (human)?
I get that if a patient is taking diet pills that block fat absorption in the body, this would lead to high lipid count in stool samples, but that falls under the category of "medication" as being the reason. If the GI tract is functioning properly why would a patient have a high lipid count in their stool sample, based only on their diet?
A high fat meal can cause high fat stools (steatorrhea).
